Chicken
- Chicken thighs, sliced
- Bart’s Mediterranean Paste

Quick Pickled Red Onions
- Red onion, thinly sliced
- Red wine vinegar
- Sugar
- Salt

Honey-Marinated Halloumi
- Halloumi, sliced
- Honey
- Red wine vinegar
- Dried oregano
- Black pepper

Chipotle Honey Yoghurt Sauce
- Greek yoghurt
- Honey
- Spicy chipotle paste
- Lemon juice
- Salt & black pepper

To Build
- Flatbreads
- Lettuce
- Jalapeños

Method:

Chicken
- Marinate the chicken thighs in Bart’s Mediterranean paste.
- Air fry or Pan-fry until golden, slightly charred and cooked through.

Pickled onions
- Add sliced red onion to a bowl with red wine vinegar, sugar and salt.
- Toss and set aside while everything else cooks.

Halloumi
- Toss halloumi in honey, red wine vinegar, oregano and black pepper.
- Air fry or Fry in a hot pan until deeply golden and sticky.

Sauce
- Mix Greek yoghurt, honey, chipotle paste, lemon juice, salt and pepper until smooth and spicy-sweet.

Assemble 
- Flat bread goes down with the yoghurt sauce, the shredded lettuce, then the chicken, halloumi, pickled red onions and finally the jalapeños

Serve
- Wrap, toast and then slice open and enjoy!

One-Pot Cheesy Chicken Tikka Pasta 🔥

Serves 2

Ingredients:

- 2 chicken breasts, diced
- 1 tbsp olive oil
- 2 small onions, finely sliced
- 2–3 tbsp tikka paste
- 1 tbsp tomato purée
- 400g tin chopped tomatoes
- 400–500ml chicken stock
- 200–250g pasta (penne or fusilli work well)
- 100–150g soft cheese (Philadelphia-style)
- Salt & black pepper
- Grated mozzarella 

To serve

- Fresh coriander, chopped
- Toasted flatbreads

Method:

Soften the onions
- Heat the olive oil in a large pan over medium heat. Add the onions with a pinch of salt and cook for 5–7 minutes until soft and lightly golden.

Cook the chicken
- Add the diced chicken breasts and cook for 3–4 minutes until sealed.

Build the flavour
- Stir in the tikka paste and tomato purée. Cook for 1–2 minutes until fragrant and slightly darkened.

Create the sauce
- Pour in the chopped tomatoes and chicken stock. Bring to a gentle simmer and cook for 8–10 minutes to let the sauce develop.

One-pot pasta moment
- Add the pasta straight into the pan, stir well, cover with a lid and simmer for 10–12 minutes, stirring occasionally, until the pasta is cooked and the sauce has thickened.

Finish creamy
- Lower the heat and stir through the soft cheese until melted and glossy. Season with salt and black pepper to taste and add in two big handfuls of mozzarella for the ultimate cheesy goodness.

Serve
- Finish with plenty of fresh coriander and serve with warm, toasted flatbreads on the side.

Garlic Parmesan Gnocchi 🔥

Serves 2 (or 1 very happily)

Ingredients:

- 500g fresh gnocchi
- 30g butter
- 1 tbsp olive oil
- 4–5 garlic cloves, finely sliced
- 150g soft cheese
- 40g finely grated parmesan (plus extra to finish)
- 1 tsp lemon zest 
- Black pepper (lots)
- Salt, to taste
- 1 tsp white or red miso
- Fresh thyme
- Crispy breadcrumbs

Method:

Crisp the gnocchi

- Heat olive oil and half the butter in a wide pan over medium-high heat.
- Add gnocchi in a single layer and let them sit undisturbed until golden and crisp. Flip and repeat then remove to a plate.

Garlic butter base

- Lower the heat. Add remaining butter.
- Add garlic slices and gently cook until just golden and fragrant (don’t rush this).

Build the sauce

- Add soft cheese, miso and thyme
- Simmer gently for 2–3 minutes until slightly thickened.

Bring it together

- Return gnocchi to the pan. Add parmesan, lemon zest, and a splash of water if needed.
- Toss until glossy and clinging.
- Season to taste
- Finish with chilli oil or flakes if you like heat.

Finish

- Add extra parmesan, crispy breadcrumbs for texture, fresh parsley and a drizzle of good quality olive oil

Chilli Cheese Toast 🔥

Ingredients:

- 2–4 slices of bread (your choice)
- 3–4 tbsp cottage cheese
- 50–80 g grated cheddar
- Half a red onion, finely diced
- 3 spring onions, finely diced
- 1 green chilli, finely chopped (adjust to heat level)
- Salt & black pepper
- Coriander
- Mango chutney

Method:

Preheat & Prep

Heat your oven grill (broiler) or air fryer to ~200 °C.
If using a frying pan, you can do this on medium heat later.

Mix the topping

In a bowl, combine:
• Cottage cheese
• Grated cheddar
• Red onion
• spring onion whites 
• Green chilli
• A pinch of salt & black pepper

Stir to combine into a chunky cheesy mixture.

Assemble

Lay your bread on a baking tray (or air-fryer basket).
Spread the cheese mixture evenly over each slice and top with a little more cheese

Cook

Oven/Grill: Bake under the grill for about 6–8 min until the cheese melts and gets those golden edges.
Air Fryer: Air fry at 200 °C for ~8–12 min until crisp and bubbly.
Pan Method: Toast the bread lightly first, then add topping and cover the pan to melt the cheese for ~5–7 min.

Serve

Slice on the diagonal and serve hot with mango chutney
