Garlic Bread Lasagna Boats 🚤 

Easy weeknight meal for when you can’t be bothered to cook 🧑🏼‍🍳 

The kids inhaled these they were actually more of a hit than I expected, but as Mark said they love garlic bread, they love lasagna, what’s not to love?! 

I only used half of the meat sauce and froze the other half so feel free to do the same or just use half the meat and half a jar. OR if you’ve got a large hungry family just double up on the garlic bread, béchamel sauce and cheese. No rules here! 

Serves 4

Ingredients 

500g beef mince
1 tbsp olive oil 
A jar of marinara sauce (I used @filippoberio_uk 340g)
8 slices of garlic bread 
8 tbsp béchamel sauce
125g grated cheddar and mozzarella mix 
Cucumber/salad to serve 

Method 

Heat the olive oil in a large pan over a medium-high heat. Add the beef mince, break it up and cook until it’s brown before adding in the marinara sauce and mix well.

Meanwhile use a spoon to press down the middle of the garlic bread slices to create a “boat” shape. Spoon in 2 tbsp of meat sauce, followed by 1 tbsp of béchamel sauce and a sprinkling of the cheese mixture.

Place in an air fryer and air fry for 7 minutes at 200c, or bake in the oven for 12 minutes at 200c.

Beef Taco Rice ☀️✨

Here’s a quick 30 minute one pan meal, perfect for busy weeknights when you don’t have much time. Full recipe below 👇🏼 

Serves 4

Ingredients 

500g beef mince
1 red bell pepper (diced)
One onion (diced)
1 tbsp olive oil 
1 packet of taco seasoning (I used Gran Luchito BBQ mild)
1 tbsp tomato puree 
300g washed uncooked rice 
900ml beef stock (I dilute 2 cubes in boiling water) 
80g cheddar cheese 
A handful of coriander to garnish, diced red onions and optional chillies to serve

Method 

Heat the olive oil over a large lidded pan and add the beef mince. Break it up and once brown add the diced pepper and onion. Mix well and cook for a few minutes until the veg starts to soften then add the tomato puree and taco seasoning. Mix well again then add the rice. Stir the rice so it’s fully coated in the mixture then pour in the beef stock. 

Bring to a gentle simmer and pop the lid on top. After 10 minutes turn the heat off completely and leave it with the lid on for another 10 minutes. As tempting as it is DO NOT TOUCH.

Remove the lid and sprinkle the cheese coriander and extra garnish on top, place the lid on for another couple of minutes so the cheese melts and serve.

Chicken Fajita Rice Bake

Serves 4 

Ingredients 

600g chicken breast
1 yellow bell pepper
1 red onion 
80g mushrooms
1 packet of fajita seasoning 
260g washed basmati rice 
600ml chicken stock (I dissolve one stock cube in boiling water) 
200g grated cheddar and mozzerella cheese (substitute with just cheddar) 
1 tbsp olive oil 
1 tsp chopped garlic

Chillies, coriander and guacamole to serve.

Method

Preheat oven to 200c 

Peel and chop the onion and chop the pepper and mushrooms into small pieces and add to a large baking dish. Add the garlic and olive oil then mix well and roast in the oven for 10 minutes. 

Meanwhile, slice the chicken into medium sized chunks, wash the rice and prepare the chicken stock.

Remove the baking dish from the oven and add the chicken, rice, fajita seasoning then mix well before pouring in the chicken stock and giving it a good stir. 

Sprinkle the cheese on top and cover with foil. Bake in the oven for 45 minutes then serve.
