20 days of one pan meals - 10/20! 🥘🌿 we are half way through the series already so my attention is already tuning to what will come next. 
But first for this episode we have this hunters chicken sausage rice.
To make this for 4 people you will need:
10 chicken sausages, I used @heckfooduk 
250g rice
125g BBQ sauce
1 red onion diced
6 rashes smoked bacon diced
1 red pepper diced
1 yellow pepper diced
3 gloves garlic minced
2 tbsp bbq seasoning, I get mine from @sainsburys 
3 tsp parsley
2 tsp onion powder
Pinch salt & pepper
1 tin chopped tomatoes
1 chicken stock pot
1L water
100g grated cheese
Optional garnish - bbq sauce, crispy bacon, spring onion, fresh parsley
To a pan add a drizzle olive oil & the sausages then brown off on a medium heat for 5 mins.
Slice each sausage in to 6 then add the bacon & onion.
Cook off for another 5 mins then add the peppers & garlic cooking for another few mins.
Add the bbq seasoning, onion powder, parsley salt, pepper, chopped tomatoes, stock pot, bbq sauce & rice then stir well.
Bring to a simmer on a medium heat then reduce down to low & cook for 15 mins until the rice is cooked through.
Top with the cheese then place under the grill until browned & melted. Add the optional garnish if using then serve!

20 days of one pan meals 9/10! 🥘🌿 episode 9 & we have this creamy chicken & bacon pesto rigatoni!
Pesto pasta is one of my absolute favourites & it has been too long since I made this recipe so I have given it a lil’ refresh for this series.
To make this for 4 people you will need:
2 large chicken breast
300g fresh pasta
1 red onion diced
4 rashers bacon chopped
4 cloves garlic minced
2 tsp basil
2 tsp onion powder
Pinch salt & pepper
1 vegetable stock pot
1 litre water
3 tbsp light Philadelphia
2 tbsp pesto
50g grated cheese
Fresh basil finely chopped
To a pan add a drizzle oil then add the chicken, basil & onion.
Brown off for a few mins on a medium heat then add the bacon & onion cooking for another few mins.
Add the garlic, salt & pepper then cook for another few mins.
Add the stock pot, boiling water, pasta, philadelphia & pesto then bring to a simmer & cook for 5 mins.
Top with the cheese then place under the grill until the cheese is melted.

20 days of one pan meals - 8/20! 🥘🌿 episode 8 & we have this cheesy chilli macaroni 😍
So fun fact I actually don’t like chilli as I can’t do the texture of kidney beans or spice but Dan loves it so I always try to do some for the freezer stock so he can still have it every now & then when I am out. So for this series I decided to combine it with pasta for a little twist & it definitely went down well!

To make 4 portions you will need:
500g beef mince
300g macaroni
1 red onion diced
1 red pepper diced (forgot to add this in on the video)
2 tbsp tomato puree
3 tsp smoked paprika
2 tsp chilli powder
1 tsp cumin
2 tsp coriander
3 garlic cloves minced
Pinch salt & pepper
1 tin chopped tomatoes
1 tin kidney beans
1 beef stock pot
1L water
50g grated cheese
Optional garnish - fresh coriander, sour cream, chilli’s, spring onion, salsa
To a pan add a drizzle olive & the onion.
Brown off for a few mins on a medium heat then add the beef & cook for 5 mins.
Add the tomato puree, herbs & spices, garlic, salt & pepper then cook for a few more mins.
Add the stock pot, chopped tomatoes, kidney beans, water & pasta then bring to a simmer.
Reduce to a low heat then and leave to simmer for 15 mins until the pasta is cooked.
Add in the fresh coriander & cheese then stir well.
Serve with the optional garnishes then enjoy!

20 days of one pan meals - 7/10! 🥘🌿 episode 7 & we have this peri peri chicken rice! When I tell you this chicken was so so good with the @capeherbandspice_uk rub on it! Highly recommend getting some to make this recipe! 
This store really well in the fridge so is perfect for meal prep through the week & has been brilliant for lunches whilst I have been having a busy one at work!
To make 4 portions you will need:
For chicken -
6 chicken thighs
2 tbsp peri peri seasoning
1 tbsp smoked paprika
1 tbsp parsley
Pinch salt & pepper
For rice - 
250g basmati rice
1 onion diced
1 red pepper diced
3 cloves garlic minced
3 tsp smoked paprika
1 tsp cayanne pepper
1 tsp chilli powder
2 tsp parsley
2 tsp onion powder
Pinch salt & pepper
Juice 1 lemon
2 tbsp tomato puree
1 chicken stock pot
1.2l boiling water
150g frozen peas
Coat the chicken in the seasoning then add to pan with a drizzle olive oil.
Cook on a high heat for 3 mins either side then reduce down to a medium heat for another 5 mins until cooked through.
Remove the chicken from the pan then set to one side.
Add the onion & pepper to the pan then brown off for a few mins.
Add the garlic, smoked paprika, cayenne, chilli powder, onion powder, parsley, salt, pepper, tomato puree, stock pot, water, rice & peas to the pan.
Stir well then bring to a simmer on a medium heat.
Reduce down to low heat & cook for 10 mins.
Stir the rice well then top with the chicken add the pan lid then leave on the heat for a final 5 mins.
Top with option garnish of fresh parsley & peri peri sauce.
