Lemon Feta Pasta Salad 🍋🌿🫒
My favorite bread dipping oil became the most perfect spring pasta salad. Bright lemon, feta, fresh herbs, juicy tomatoes… pasta salad perfection!

🛒 You’ll need:
* 12 oz pasta
* 1/2 cup good olive oil
* juice of 1 large lemon
* zest of 1 lemon
* 2 cloves garlic, minced
* 1 tsp dried oregano
* 1/4 tsp red pepper flakes
* 2 tbsp fresh dill, chopped
* 2 tbsp fresh parsley, chopped
* 4 oz feta crumbles
* 1 pint cherry tomatoes, halved
* flaky salt + black pepper

🤌🏼 How to:
1. Boil the pasta in heavily salted water until al dente. Rinse so it cools slightly.
2. Whisk together the olive oil, lemon juice, lemon zest, garlic, oregano, red pepper flakes, salt, and pepper.
3. Add the warm pasta and toss so it soaks up all the flavor.
4. Fold in the cherry tomatoes, dill, parsley, and feta.
5. Finish with extra herbs, flaky salt, cracked pepper, and another drizzle of olive oil before serving.

For the meatballs:
• 1 cup peach preserves
• ¾ cup BBQ sauce
• 2 tbsp bourbon
• 1 tsp Worcestershire sauce
• 18oz bag of frozen meatballs

For serving (optional!):
• Slider buns
• Jalapeño slices
• Sliced red onion (or green onion)
• Sesame seeds

🤌🏼how to:
	1.	In a bowl, whisk together peach preserves, BBQ sauce, bourbon, and Worcestershire sauce.
	2.	Pour the sauce into the crockpot, then add your meatballs and stir till they’re fully coated.
	3.	Cook on LOW for 4 hours or HIGH for 2-3 hours.
	4.	Serve over slider buns, coconut rice, or just eat em straight out of the crockpot!

Serves 8
🛒You’ll need:
🍋For the lemon garlic shrimp:
2 lbs large shrimp, peeled and deveined
4 tbsp olive oil
6 garlic cloves, minced
2 lemons, zested and juiced
1/2 tsp red pepper flakes
1 tsp kosher salt, black pepper, paprika 

🥒For the couscous salad:
3 cups RiceSelect® Pearl Couscous
3 cups cherry tomatoes, halved
2 Persian cucumbers, diced
1 small red onion, finely diced
8 oz feta, crumbled
4 tbsp fresh dill, chopped

🫙For the Greek vinaigrette:
2/3 cup olive oil
4 tbsp red wine vinegar
2 tbsp lemon juice
2 garlic cloves, grated
2 tsp Dijon
1 tbsp honey 
2 tsp dried oregano
1 tsp kosher salt, black pepper

🤌🏼how to:
	1.	Bring water to a boil and add salt & butter, according to package directions. Cook the pearl couscous until tender, drain, and let cool. 
	2.	Toss shrimp with olive oil, garlic, lemon, red pepper flakes, salt, and pepper, let sit while you prep the veggies & dressing.
	3.	Whisk all the vinaigrette ingredients together.
	4.	Sear shrimp in a hot pan until just pink, work in small batches so they don’t steam! 
	5.	Toss couscous with tomatoes, cucumbers, red onion, feta, dill, and pour the dressing over and gently mix
	6.	Pile the shrimp on top, serve warm or chilled!

Ep. 10 of Sandwich Sundays: The Jalapeño Popper Fried Chicken Sandwich 🌶️ Crispy chicken, a creamy jalapeño popper filling loaded with bacon, and two kinds of cheese. But the bread… my goodness. The panko crust on the sourdough has raised. the. bar.

Serves 2
🛒You’ll need:
For the popper filling:
4 oz cream cheese, softened
1/4 cup shredded sharp cheddar
1/4 cup shredded white American
4-6 slices thick-cut bacon, cooked crispy and crumbled
2 tbsp candied jalapeños, diced
1 fresh jalapeño, diced (seeds in for heat, removed if you’d like it more mild)
4 green onions, thinly sliced
1/2 tsp garlic powder, black pepper, paprika

For the sandwich:
6 frozen breaded chicken tenders
4 thick slices sourdough
2 slices white American cheese
3 tbsp mayo
1/2 cup panko breadcrumbs

🤌🏼how to:
	1.	Air fry or bake the chicken tenders according to the package until extra crispy, then chop into 1/2 inch pieces and set aside
	2.	Cook the bacon until crispy, drain, and crumble
	3.	In a bowl, mix the softened cream cheese, shredded cheeses, crumbled bacon, candied and fresh jalapeños, green onions, garlic powder, paprika, and black pepper until fully combined
	4.	Spread mayo on one side of each slice of sourdough, generously
	5.	Pour panko onto a plate and press the mayo side of each slice firmly into the panko so it sticks
	6.	Flip 2 slices panko-side down on your work surface. Layer on a generous schmear of the popper filling, and press chicken pieces in so they stick. Top with a slice of white American
	7.	Top with the remaining sourdough, panko-side up
	8.	Heat a lightly-oiled skillet over medium-low. Add the sandwiches, cover with a lid, and cook 3 to 4 minutes per side until the panko is golden and crusty and the cheese is fully melted, then let rest 1 minute, slice on the diagonal, enjoy!

I ended up dipping mine in @mw.fresh Spicy Bacon Jam - SO good. Ranch would be perfect, too!
