Super delicious and easy to make butternut squash soup 🎃 Ingredients below 👇 

1 butternut squash
1 onion
80g pancetta or bacon lardons
Sprig of rosemary and thyme
600ml (2 + 1/2 cup) vegetable stock (more or less depending on preferred consistency)
50ml (1/4 cup) single or double cream

Method:
1. Cut around 1/4 of the squash into small cubes, drizzle with olive oil, salt and pepper and roast at 180C (350F) for around 20min, until caramelised (this step is optional)
2. Finely dice the onion, then sauté in some olive oil until translucent. Cut the remaining squash into cubes and add to the onion. Stir for 10-15min, until the squash is slightly caramelised (you can alternatively roast the squash for the same time)
3. Add the stock, rosemary and thyme, season with salt and pepper and simmer for 20-25min, until the squash is tender.
4. In a separate pan, fry the pancetta until crispy, then mix with the diced roasted pumpkin to form a topping.
5. Remove the herbs, then blend the squash until smooth. Add the cream and stir. Serve the soup with the pancetta topping and a drizzle of olive oil if desired!

Let’s continue the pumpkin series with this delicious and super easy to make pumpkin spice tiramisù 🎃 Ingredients below 👇 

300g (1 cup) pumpkin purée
500g (2 cups) mascarpone
2 egg yolks
150g (3/4 cup)sugar
300ml (1 + 1/4 cup) double/heavy cream
2 tsp cinnamon
1 tsp ground ginger
1/2 tsp nutmeg
1/4 teaspoon ground cloves
1 tsp vanilla
1 pack savoiardi (ladyfinger) cookies
Fresh brewed coffee, cooled
Cocoa powder and more cinnamon, for dusting

Method:
1. Whisk the yolks and sugar until pale and fluffy, then whisk in the mascarpone, pumpkin purée, spices and vanilla until incorporated. Add the cream and whisk until combined and a nice creamy consistency, similar to whipped cream.
2. Dip the savoiardi in the coffee very briefly (2 seconds is enough), add to the bottom of a dish, then add roughly half the cream mixture. Repeat with a second layer of coffee soaked savoiardi and cream, then finish off with a dusting of cocoa and cinnamon. Refrigerate for at least 2 hours and enjoy!

Let’s start a fun pumpkin series 🎃 Super easy pumpkin bread, perfect for this chilly October 🍞Ingredients below 👇 

300g pumpkin (I used delica, you’ll need about half of one)
600g (5 cups) bread flour
1 sachet dried instant yeast
12g (2 tsp) salt
200ml (3/4 cup) water
1 tbsp honey
3 tbsp olive oil

Method:
1. Cut the pumpkin, remove the skin and seeds and bake in foil at 180C (350F) until tender, around 30-40min. Let it cool, then blend until smooth.
2. Add the flour and yeast to a stand mixer bowl and mix together, then add water, oil, honey and the pumpkin purée. Knead until smooth and elastic, then add the salt and knead for a further 2 minutes, until fully incorporated. Cover and let rise until doubled, around 2 hours.
3. Knock down the dough, shape into a ball and use kitchen twine to create 8 equal segments. Let rise for another hour.
4. If using a Dutch oven like here, place it in a preheated oven at 220C (425F) for 10-15min, then place the bread in and close the lid. Bake for 20min, remove the lid and bake for a further 15-20min. If it starts getting too dark lower the oven temperature slightly (it will be naturally darker than other breads due to the natural sugars in the pumpkin).
5. If using a baking sheet, preheat this in the oven similarly to above, then place the bread on top and toss some ice cubes at the bottom of your oven - this will improve the rise of your bread!
