CREAMY SUN-DRIED TOMATO PASTA 🍝

SPEEDY CREAMY NOODLE SOUP w/ my freezer favourite; @Quorn Pieces!!

AD | I love knowing that I've got a bag of Quorn Pieces in the freezer. They only take 10 minutes to cook on the hob, they're high in protein, high in fibre, low in saturated fat, aaaaand have no artificial ingredients!! Such a win!! Give this recipe a go and enjoy!

Ingredients:
(serves 2)
300g Quorn Chicken Pieces
3 Garlic cloves, minced
1 inch Ginger, minced
1 tbsp chilli oil
1 tbsp Peanut Butter
1 tbsp Light Soy sauce
1 tbsp Rice wine vinegar
400ml veg stock
400ml Low-fat coconut milk
2 nests Noodles
2 pak choi, sliced into quarters
Spring onions and sesame seeds for garnish

Cooking method:
1. Fry the Quorn Pieces in a pan with 1 tbsp vegetable oil, 1/2 the garlic, 1/2 the ginger, and chilli oil. Add on the lid and cook for 10 minutes, stirring occasionally. Remove from the pan once cooked and set aside.
2. In the same pan, add in the rest of the garlic and ginger. Fry for a minute, then add in the peanut butter, soy sauce, rice wine vinegar, vegetable stock, and coconut milk.
3. Cook the noodles and pak choi in the broth.
5. Once the noodles are cooked, divide the noodles and broth between two bowls and top with cooked Quorn Pieces, pak choi, spring onions, and sesame seeds.
